Minute Rice Review and Giveaway!


I recently was given the opportunity to try Minute Rice's Brown Rice. I've been a fan of Minute Rice for a long time but have never tried the brown rice before. I was always afraid it would taste different and we wouldn't like it but I was pleasantly surprised. It was great!

Why should you eat brown rice instead of white rice? It's healthier! In general, brown rice is less processed than white and has more nutritional content. All rice starts out as brown but the germ and husk are removed to create white rice. During this process some of the natural nutrients are lost. Brown rice is whole grain and according to this article at Associated Content:

...brown rice offers six times as much thiamin, three times as much riboflavin, five times as much niacin, twice as much vitamin B6, twice as much folate as white rice and offers such nutrients as vitamin K and betaine that white rice does not.

Some people say that the taste is different but I really did not notice a difference. I also have a picky 2 year old and he didn't mind it either. I modified one of the recipes on the back of the box to make Teriyaki Chicken and Rice and it was awesome! From beginning to end it took me about 20 minutes to make dinner and only 10 of that was cooking the rice.

I'll definitely be using Minute Rice's brown rice regularly from now on. It was quick and easy and tasted great. If you want even faster, they also have Ready to Serve varieties which only take 60 seconds to make! Great if you're a really busy family, or even to take with your lunch!

Chicken and Spinach Florentine
Makes 4 Servings



Ingredients:
1 Tbsp. oil
1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
6 cups baby spinach leaves, washed, dried
2 cups MINUTE® Brown Rice, uncooked
1 1/2 cups grape or cherry tomatoes, halved
1 can (14-1/2 ounces) chicken broth
1/4 cup Parmesan cheese, grated


Directions:
HEAT oil in large deep skillet on medium heat. Add chicken; cook 10 minutes or until chicken is cooked through, stirring frequently.

ADD spinach, rice, tomatoes and broth; mix well. Bring to boil. Reduce heat to low; cover. Simmer 10 minutes.

STIR in cheese. Let stand 5 minutes.

Quick Mexican Rice

Non-stick cooking spray
1 cup diced onion
1 cup diced bell pepper
2 cooked cooked Brown Minute Rice
2 cups cooked ground beef
2 cups mild picante sauce
1/2 cup sliced black olives
Sliced jalapeno peppers (if desired)

Spray a large frying pan with non-stick cooking spray. Saute onion and bell pepper until they are soft. Stir in cooked rice, cooked ground beef, picante sauce, and black olives. Cook over medium-low heat until mixture is completely warm. Divide mixture among 4 plates and serve. Top with sliced jalapeno peppers, if desired. Makes 4 main dish servings. This is a great way to use left-over rice and ground beef. Enjoy!

The one dish chicken breast and brown rice is so easy. less than 30mins and supper is done. I do substitute cream of chicken with herbs instead of plain cream of ckn.

an old favorite in our family was when my grandmother would fry quail in a frying pan on the stove top and serve it over brown rice. It was salty as anything--just like southerners like it! it's fantastic

Brown Rice Granola
Ingredients:
2 ea (4.4 oz container) MINUTE Ready to Serve Brown Rice
1 cup rolled oats
1 cup slivered almonds
1 cup coconut
1/4 cup brown sugar, packed
1/4 cup maple syrup
1/4 cup vegetable oil
1 cup raisins



Directions:
PREHEAT oven to 250° F.

COMBINE rice, oats, almonds, and coconut in a large bowl. In a separate bowl combine brown sugar, maple syrup and oil. Combine both mixtures and stir well. Line a cookie sheet with non-stick foil and spread rice mixture evenly.

BAKE 1 hour, stirring occasionally. Remove from oven and transfer to a large bowl.

ADD raisins and mix to distribute evenly. Cool and store in an air-tight container.
