Menu Plan Monday

*I'm a day late with this post! I had it all written out and saved as a draft and then I forgot to post it! lol

We were doing really well with menu planning for a few weeks back in the fall and then we went on vacation and everything went to heck. I know, excuses, excuses. I've been very lazy when it comes to dinner lately. We've been eating a lot of things out of a box or eating out. I know this is definitely not healthy and it sure costs a whole lot more. So, this week I'm going to try and get back into the swing of things. Here's what I'm planning for this week:

Monday: Chicken Enchiladas

Tuesday: Caesar Chicken Pasta Salad

Wednesday: Crockpot Lasagna

Thursday: Super Easy Crock Pot Pork Chops

Friday: Leftovers or takeout

Saturday: More leftovers or fend for yourself - we have a birthday party to go to that day so I don't know what the evening will really be like once we get home.

Sunday: Spaghetti and Meatballs with Meat Sauce

Menu Plan Monday

Last week was a bust when it came to menu planning. I'm not really sure what happened. I just didn't sit down and plan anything. But, we're back to it this week! Here's what I'm planning:

Tuesday: Stuffed Shells

Wednesday: Calzones (Eric is making these.)

Thursday: Crock Pot Beef Stew

Friday: Oven Baked Chicken

Saturday: Ham and Potato Casserole (mix some cut up ham into a box of scalloped or au gratin potatoes and bake)

Sunday: Easy Chicken Pot Pie

Moday: Leftovers!

Menu Plan Monday

So, last week went really well. We stuck to the plan and had a very nice meal each night. I had lots of leftovers for lunches for both Ben and me. It really worked out great. The challenge will continue to be finding meals that are quick to prepare that everyone likes. The Potatoes Rancheros and my homemade KFC bowls were the biggest hits this week. They will definitely go on the "make again" list. I also ended up making a lot of extra meat sauce so now there's some in the freezer.

Here's what I'm planning for this week:

Tuesday: Oven Baked Chicken

Wednesday: Slow Cooker Pulled Pork Sandwiches

Thursday: Creamy Ranch Pork Chops

Friday: Leftovers or maybe eating out. We're going to Grammy's house for Halloween.

Saturday: Easy Chicken Pot Pie

Sunday: Stuffed Shells Hoping to make extra so I can freeze some.

I hope this week goes over as well as last week did. We'll see!

Anyone who knows my family knows that meals are tough in our house. Partly because I work and Ben goes to bed early so there's very little time for cooking. Mostly, though, it's because Eric and I eat very different things. It's always a joke in our family that Eric only eats junk. He would much prefer to eat cheese and crackers or nachos as a meal instead of the typical meat and potatoes. It's always a struggle to find things that both he and I like.

Starting this week, we've decided to try and stick to a Menu Plan each week for a few different reasons:
1. This will save us a ton of money because I can plan meals around things we have in the house or things that are on sale each week.
2. I won't have to spend as much money on lunch to bring to work. I always bring a lunch but tend to bring a Lean Cuisine or something. Instead, I'll now be able to bring leftovers.
3. I think it's important to have time together as a family. Now that Ben is getting a little bit older and is able to feed himself, we can all sit down and eat dinner together. I think it's important to sit down together as a family at least once a day and would like to continue this as he gets older.
4. By cooking at home we can all eat healthier.

I will only be listing the main dishes I intend to make for dinner. Side dishes will just be whatever I feel like making or whatever we have on hand. Breakfast and lunch are usually the same way.

So, without further ado, here is this week's Menu Plan:

Tuesday: Pomegranate Chipotle Salmon

Wednesday: Shake N Bake Porkchops (this is one of Ben's favorites!)

Thursday: Asiago Chicken Bake

Friday: Homemade "KFC" Chicken Bowls
I plan on layering mashed potatoes, corn, chicken, shredded cheese and gravy and baking until cheese melts and it's heated through.

Saturday: Potatoes Rancheros Casserole

Sunday: Spaghetti and Meat Sauce

Monday: Leftovers - clean out the fridge to prepare for Tuesday grocery shopping.
